L-Theanine, chemically known as N-ethyl-γ-L-glutamine, is a unique free amino acid found in tea, accounting for approximately 50%–70% of the total free amino acids in the tea plant. As a key flavor component in tea, theanine imparts a fresh, sweet taste to the tea liquor, while also harmonizing the aroma and bitterness. In nature, theanine is primarily found in plants of the Theaceae family (such as the tea tree) and some fungi.
Green Tea Extract L-Theanine is a white needle-like crystal or crystalline powder, odorless, with a caramel-like aroma and a savory taste similar to monosodium glutamate (MSG). It is physically stable and does not easily decompose under typical food processing conditions (such as high temperatures and acidic/alkaline environments). Theanine is highly soluble in water, with solubility increasing significantly with temperature (approximately 385 g/L at 0℃ and approximately 556 g/L at 100℃), but insoluble in organic solvents such as ethanol and ether. The pH of a 1% aqueous solution is approximately 5.0–6.0.
